Lemon Pepper Carrot Salad

I’m not a fan of carrot salad, but this salad is the exception. It’s a childhood favorite of mine that will knock your socks off.

Ingredients

Main ingredients

  • 8 medium-sized carrots, peeled and coarsely grated

  • 4 scallions, chopped

  • 1/3 cup sugar

  • 1/3 cup lemon juice

  • 1 tablespoon Bartenura Olive Oil

Directions

Prepare the Salad

1.

Place all the ingredients in a bowl. Mix well and allow to sit for 10 minutes. Mix well again and serve.
