The middle-eastern flavors and vibrant colors in this nutrition-packed salad are sure to impress. Bonus: the beautifully delicate carrot ribbons are so simple to create with everyday tools you already have at home.
8 large carrots
juice of 2 lemons (about 1/2 cup)
1 teaspoon salt
2 cloves minced garlic or 2 cubes Gefen Frozen Garlic
1/2 teaspoon cumin
1/4 teaspoon black pepper
1/4 cup (packed tight) finely chopped cilantro (including stems)
1 tablespoon dry roasted pistachios (optional)
1 tablespoon walnut cheese (optional, see recipe)
Use your peeler to slice carrots into ribbons. With each carrot, you’ll get to a point where there’s more left but it’s very difficult to peel. Move on to the next carrot at that point and save the unpeelable parts for something else.
In a cup, mix all remaining ingredients except pistachios and walnut cheese.
Pour over carrot ribbons and gently mix well.
Place onto your serving plate and top with pistachios, walnut cheese, and extra cilantro or parsley to garnish.
