1 (250-gram/8.5-ounce) container quark cheese (see note)
2 eggs
3 tablespoons Gefen Potato Starch
4 tablespoons sugar
oil, such as Gefen Cottonseed Oil, for frying
In a bowl, mix together the quark cheese, eggs, potato starch, and sugar until smooth (you can do this by hand).
Heat oil in a frying pan over medium heat. Add small scoops of batter to make cheese latkes and big scoops of batter to make pancakes. Fry for one minute per side, until golden.
