Yield: approximately 24 cookies
2 and 1/2 (3-and-1/2-ounce) bars chocolate, such as Geneve Dark Chocolate
3/4 cup sugar
2 eggs
3 tablespoons oil
1/4 teaspoon coffee dissolved in 2 teaspoons water
pinch of salt
1/4 cup potato starch
1 cup Gefen Almond Flour
1 and 1/4 cups Gefen Ground Almonds
Preheat oven to 350 degrees Fahrenheit.
Melt chocolate and set aside.
In the bowl of an electric mixer, mix all ingredients except chocolate until combined.
Add melted chocolate and mix again.
Scoop cookies onto a baking sheet, pat down a bit, and bake for 12 minutes.

Can I just use almond flour instead of ground almonds?
We haven’t tested it but I would guess that works. Let us know about your experience if you try it.
