Add eggs, mix well.
Roll out, cut into shapes, and bake on a greased cookie sheet in a 400-degree-Fahrenheit oven for about 10 minutes or until golden brown.

I subbed almond extract for the ginger flavor and these were great for Acharon shel Pesach gebrokts cookies. These were surprisingly good, and for those looking to bake just with matzah meal and not with cake meal, this recipe worked out well.
