2 eggs
2 cups cold water
1 teaspoon garlic powder
1 and 1/2 teaspoons paprika
1 teaspoon onion powder
1/4 teaspoon black pepper
3 to 4 kosher dill pickles, sliced 1/4 inch thin and dried very well (or you can use Haddar Pickle Chips!!)
1 teaspoon Manischewitz Potato Starch
canola oil
In a medium bowl, beat eggs with a fork. Add cold water and mix well. Stir in pancake mix, spices and combine. Allow to rest for three to four minutes. Stir again until all ingredients are consistently distributed.
Dry the pickle slices very well, then coat them in a little potato starch. This helps the latke batter stick to the pickle.
Take about one tablespoon of latke batter and form it around a pickle slice. Repeat with the rest of the pickles.
Set up a cooling rack over paper towels near the stove.
Heat up canola oil in a large frying pan. Fry about two to three minutes until golden brown on both sides. Drain on a rack over paper towels and sprinkle with more a TOUCH of salt (not too much, just enough to surface season!)
