Diets These popsicles are the perfect ending to a barbecue dinner. Light, creamy, and sweet—what could be better?
Yield: 6 cups (about 12 popsicles, but will vary depending on the size of molds)
1 (13.5-ounce) can coconut milk
1 and 1/2 cups crushed pineapple
1 cup pineapple juice
1 cup coffee creamer (or any milk or milk alternative, such as Gefen Almond Milk)
1/2 cup shredded coconut
Combine all ingredients.
Using a hand blender, blend on low for three minutes.
Pour mixture into ice pop molds and freeze at least five hours.
When frozen, release from molds and enjoy!
