A welcome change from the usual side dishes, and it’s really easy! After I tried this out one Shabbos, my family kept requesting it again and again. Yours will, too.

Ingredients

Main ingredients

  • 1 teaspoon baking powder

  • 1/2 cup whole wheat pastry flour, such as Shibolim White Whole Wheat Flour

  • 1 package vanilla sugar

  • 1 container non-dairy whipped cream (optional)

  • 1 package candied cherries (optional)

Directions

For Pineapple Kugel

1.

Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).

2.

Mix all the filling ingredients in a food processor until just blended.

3.

Pour mixture into the pie crust.

4.

When the pie has cooled, top it with whipped cream and candied cherries, if desired.

5.

Bake for 40 minutes, or until set.

Notes:

This side dish can be served hot, room temperature, or even cold.
