When I was asked to create diet desserts for this issue of Whisk, I thought that was an oxymoron. But I had a few tricks up my sleeve…
1/4 cup coconut milk
juice of 2 limes (or about 4 tablespoons Heaven & Earth Lime Juice)
4 cups Glicks Pineapple Chunks
1/4 cup water
2 tablespoons Gefen Corn Syrup
In a blender, puree coconut milk, lime juice, chopped pineapple, water, and corn syrup.
Pour into molds, add popsicle sticks, and freeze for three hours or until solid.
