It’s always nice to have a fresh, light salad at a barbecue. It adds color to the table and is always ready first. Pistachios can get overshadowed by other flavors easily, so try to control the urge to add more things to this salad (I’ve tried many times, unsuccessfully).
1 head romaine lettuce, shredded, or 4 cups arugula
1/2 large (or 1 small) red onion, thinly sliced
2 to 3 chicken breasts, grilled and sliced (optional)
1/4 cup lightly crushed pistachios
drizzle of Gefen Olive Oil
1 to 2 tablespoons Tuscanini Lemon Juice (optional)
1 teaspoon Gefen Salt
1/4 teaspoon black pepper
Assemble salad with lettuce, red onion, chicken, and pistachios.
Dress with olive oil, salt, and pepper and toss gently.
