Diets The colors of this salad provide a gorgeous presentation. Feel free to switch things up with your family’s favorite fruity flavors.
1 sweet potato, cubed
2 tablespoons oil
1 teaspoon salt
8 ounces iceberg lettuce
1/2 cup pomegranate arils
1 mango, diced
2 tablespoons sugar
1 tablespoon hot water, plus 2 tablespoons room temperature water
2 tablespoons oil
1/2 tablespoon Tuscanini Balsamic Vinegar
1 teaspoon Glicks Soy Sauce
1/2 teaspoon salt
pinch of Pereg Black Pepper
Combine sweet potato with oil and salt. Place on a baking sheet and roast at 400 degrees Fahrenheit for 30 minutes.
Place salad ingredients in a large bowl.
Dissolve sugar in hot water. Mix with the rest of the dressing ingredients. Pour over salad.
