Potato ‘N’ Squash Sauté

Ingredients

Potato 'N' Squash Sauté

  • 1 onion, diced

  • 6 tablespoons oil or fat

  • 4 medium potatoes, cubed

  • 3 medium squash, cubed

  • 1/2 teaspoons salt

  • 2 peppercorns, optional

Directions

Prepare the Potato 'N' Squash Sauté

1.

Sauté onion in small pot until golden. Remove onion, and set aside.

2.

Add other ingredients to oil.

3.

Cover and cook over medium heat, stirring occasionally until potatoes are cooed, 30 minutes. Add several drops of water if needed.

4.

Add sautéed onions and serve hot.

I made this as a side dish and it came out great! It’s simple and easy, with a classic flavor and everybody enjoyed. Highly recommended!
