Diets Delicious foods and flavors come together in this loaded power bowl. This salad is sure to be a favorite!
1 cup quinoa
1 and 3/4 cups water
1/2 tablespoon oil
1/4 teaspoon salt
6 ounces spring greens or romaine lettuce
roasted sweet potato (see below)
1/2 cup cooked quinoa (see below)
handful sunflower seeds
handful pomegranate arils or raisins
1 small sweet potato, diced
1 onion, diced
oil spray
salt
1/3 cup oil
2 tablespoons lemon juice
1/2 teaspoon pepper
pinch salt
Preheat oven to 400 degrees Fahrenheit.
Place all quinoa ingredients in a 9×13 pan and bake covered 30 minutes or until all water is absorbed.
Place all sweet potato ingredients in 9×13 pan and bake uncovered 45 minutes or until crispy.
Mix dressing ingredients. Toss salad with desired amount of dressing.
