Diets These cupcakes really live up to their name! The finished product comes out with a perfect dome on top, moist and light, and they are super easy to make. Be sure not to overfill the cupcake holders or they will spill over onto the cupcake tray. Frost with your favorite frosting recipe, top with some sprinkles, and voila! Professional cupcakes!
12 eggs
3 cups sugar
4 cups flour
4 teaspoons Haddar Baking Powder
1 tablespoon Gefen Vanilla Sugar
1 cup oil
3/4 cup orange juice
2 tablespoons Gefen Cocoa (optional)
Beat eggs and sugar until light and foamy.
Sift together flour, baking powder, and vanilla. Add to eggs, alternating with orange juice and oil. Add cocoa if desired.
For best results, set aside batter for one hour before filling cups.
Fill measuring cup with batter and pour into lined cupcake tins, 2/3 full. Bake at 350 degrees Fahrenheit for 20-25 minutes.
Yield: 60 cupcakes
