Although these are called honey cupcakes, the taste of honey is so subtle that you may not even realize it’s there. Light and airy, these cupcakes can be eaten plain or frosted with your favorite frosting, and you can even mix in some nuts, chocolate chips, or fruit.
Yields 48 cupcakes
8 eggs
2 cups sugar
3/4 cup oil
2 teaspoons coffee, dissolved in 1/4 cup water
3/4 cup orange juice
1 cup Gefen Honey
1 teaspoon orange extract or rind of 1 orange
2 teaspoons Gefen Vanilla Sugar
1 teaspoon baking soda
1 teaspoon baking powder
4 cups flour
Beat eggs with sugar until fluffy.
Add all liquids. Mix well.
Add dry ingredients.
Pour batter into lined muffin tins. Bake at 350 degrees Fahrenheit for 25 minutes.
