Diets I never met a chocolate chip cookie I didn’t become instant friends with. Meet my new BFFs: pumpkin chocolate cookies that are light and airy with the subtle flavor of winter. Mmm, so good!
2 and 1/4 cups flour
3/4 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) margarine, softened
1 cup granulated sugar
1/2 cup dark brown sugar
2 large eggs
1 teaspoon Gefen Pure Vanilla Extract
3/4 cup pumpkin puree
1 and 1/2 cups semisweet chocolate chips like Gefen Chocolate Chips
Preheat oven to 350 degrees Fahrenheit.
In a small bowl whisk flour, pumpkin pie spice, baking soda and salt, and set aside.
Using a stand mixer, combine margarine with both sugars on medium speed. Reduce speed to low and add eggs, one at a time, then add vanilla and pumpkin puree. Beat until well mixed, about one minute.
Add flour mixture gradually, until just combined. Mix in the chocolate chips.
Using a tablespoon or cookie scoop, place balls of dough on parchment paper-lined cookie sheets.
Bake for six minutes, then remove from the oven and press down with a non-slotted spatula to flatten. Bake for another nine minutes, until golden. Let cool.
