Ingredients

Purple Cabbage Salad

  • 1 Tbsp olive oil

  • 1 tsp mayo (optional)

  • juice of 1 fresh lemon

  • salt & pepper to taste

  • 1 bag shredded purple cabbage

  • 3 scallions, chopped

  • 1/8-1/4 c dried cranberries

  • 1/8-1/4 c roasted sunflower seeds, pumpkin seeds, slivered almonds or cashew halves

Directions

Prepare the Purple Cabbage Salad

1.

Combine all ingredients in a bowl or large ziploc bag. Mix well and serve! Leftovers are good for a day or two.
