This gorgeous rice trifle is a real show-stopper and super easy to prepare!
2 and 1/2 cups white or basmati rice
salt, to taste
pepper, to taste
3 red peppers
3 yellow peppers
3 green peppers
3 orange peppers
oil, for sautéing
Cook the rice according to package directions. Add salt and pepper to taste. Dice all the peppers, keeping each color separate. Sauté each color pepper separately in oil.
Separate a small portion of each color pepper and reserve for garnishing the top.
Place 1 cup of rice in a 2-quart glass bowl. Using the back of a cup, press the rice down; add red peppers. Repeat process layering rice and different colored peppers until done.
Garnish the top with reserved colored peppers.
