Raizy’s Challah Kugel

Ingredients

Challah Kugel

  • 1 teaspoon cinnamon

  • 4 Granny Smith green apples, peeled and finely sliced

  • sugar, for sprinkling

  • Gefen Cooking Spray

Directions

1.

Preheat oven to 350 degrees Fahrenheit.

2.

Soak the challah in water and squeeze it out. Use only the soft part of the challah; discard the crust.

3.

In a large bowl, mash the challah. Using an electric mixer, mix the mashed challah with the rest of the ingredients.

4.

Place the mixture in a lined or greased 9×13-inch pan. Sprinkle some sugar on top.

5.

Bake at 350 degrees Fahrenheit for one hour and 45 minutes.

6.

Best served warm.

can i leave out the apples? also i remember my mother making it and its delicious but i dont have her recipe anymore. and i also remember her just ripping pieces off the challah i dont remember her using a mixer. can i skip the mixer or do you specficially want it to smooth instead of chunks? i would love not to have to pull out my mixer for it. ( also my mother used to put in raisins and it was delicious. it gave it a sticky delicious sweetness.(dont know if its a word))

Hi Tamar, Raizy suggests keeping the apples, as they’re the star of the recipe, it might be ok without, though we never tried. Raizy likes a smooth texture so you can feel free to do it without a mixer but it’ll be harder for the flavors to be evenly distributed with big chunks of challah. And the raisins are always a nice addition if you like that.

I just have another question to ask. When I use the mixer and add all ingredients I wonder if I should add also the sliced apples I’m assuming they will get crushed up as well or does it get added after to maintain the slices? Shes not saying anything specifically so I’m assuming that I should add it and it will get chopped
up as well?

First mix all the ingredients, then add the slices after and mix them in by hand.
