Diets Love this new dairy salad! If you love dairy salads, this one is refreshingly different, while being simple and delicious. It’s important to use grated Parmesan because the flavor really gets everywhere. And if you’ve never used fennel before, why not try it now? It’s really not scary!
8 ounces chopped Romaine lettuce
1 pear, thinly sliced
1 fennel bulb, thinly sliced (I used a mandoline)
1/4 red onion, finely diced
1/4 cup grated Parmesan cheese
juice of 2 limes ( or about 4 tablespoons Heaven & Earth Lime Juice)
3 tablespoons Gefen Olive Oil
2 tablespoons Gefen Lite Mayonnaise
1 teaspoon Haddar Dijon Mustard
1 tablespoon Gefen Maple Syrup or honey
1/2 teaspoon salt
pinch of black pepper
1/4 teaspoon dried parsley
Whisk together all dressing ingredients.
Add all salad ingredients to a bowl. Toss with dressing.

Can I omit the cheese and make it parve?
Sure
Yummy! I poured over the whole dressing and it was too much, the veggies were drowned. I would make the salad again, but use half of the dressing.
