Refreshing Romaine, Apple, and Fennel Salad

Ingredients

Salad

  • 8 ounces chopped Romaine lettuce

  • 1 pear, thinly sliced

  • 1 fennel bulb, thinly sliced (I used a mandoline)

  • 1/4 red onion, finely diced

  • 1/4 cup grated Parmesan cheese

Dressing

  • 1/2 teaspoon salt

  • pinch of black pepper

  • 1/4 teaspoon dried parsley

Directions

1.

Whisk together all dressing ingredients.

2.

Add all salad ingredients to a bowl. Toss with dressing.

Yummy! I poured over the whole dressing and it was too much, the veggies were drowned. I would make the salad again, but use half of the dressing.
