My kids love the texture of peanut chews with marshmallow fluff. One of my girls is allergic to marshmallows, so I decided to swap some other ingredients to create a yummy texture and taste! We nailed it!
1 and 1/2 cups light corn syrup
1 and 1/2 cups peanut butter
3/4 cup light brown sugar
1 4-oz. instant vanilla pudding
2 oz. baking chocolate
7 and 1/2 cups rice crisps
Put sugar, corn syrup, and peanut butter in baking pan in hot oven until smooth when mixed.
Add baking chocolate- once melted add in the pudding. Remove from oven.
Add rice crisps one cup at a time. Mix well. Form into logs or spread out in a pan. Drizzle with chocolate.
