A comforting sweet kugel with a vintage – and definitely heimishe – feel.

Ingredients

Main ingredients

  • 1 cup rice

  • 4 eggs, slightly beaten

  • 1 cup orange juice

  • 1 and 1/2 cups sugar

  • 1/3 cup oil

Directions

Prepare the Rice Kugel

1.

Cook rice according to package directions.

2.

Combine all ingredients. Pour into nine- by nine-inch greased baking pan.

3.

Bake at 350 degrees Fahrenheit for one hour.

Great variation to standard rice.
I did find it too sweet and too oily though.
The next time round, I cut the sugar in half and put in 1/4 Cup oil.
Other replacements that worked for me:

  • I didn’t cook the rice. I baked it. Yes. I baked it twice. The first time with some salt, oil, and water. The second time, I simply mixed in the rest of the ingredients first and stuck it back in the oven. No pot to wash!
  • Instead of Orange Juice I used water or parve milk
  • Instead of Raisins I used Craisins
