Our family loves butternut squash and we like it with a little bite to it to cut the sweetness. This recipe is a perfect elegant side dish which works great for Pesach as well.
1 butternut squash
Olive oil
Salt
1 small red onion, finely diced
Cilantro (optional)
1 T oil
1 T balsamic vinegar
1 T Sweet chili sauce
Slice butternut squash and arrange on roasting pan. Drizzle olive oil and salt and bake at 425F till edges begin to crisp, approximately 45 minutes.
Combine dressing ingredients in a container and shake well.
Lay butternut squash on a serving platter. Layer the red onion on top, drizzle cilantro if using.
Drizzle dressing.
