Diets Home fries, as these are often called, are a family favorite all year-round. For extra zing, you can experiment with other herbs and spices, such as garlic, parsley, pepper, paprika, tarragon, cayenne pepper, etc.
2 pounds large Yukon Gold potatoes, unpeeled, each cut into 6 to 8 wedges
2 tablespoons Gefen Olive Oil
2 teaspoons kosher salt or Tuscanini Sea Salt
Preheat oven to 450 degrees Fahrenheit.
Toss all of the ingredients in a medium bowl to coat potatoes.
Arrange potatoes on a cookie sheet, face up. Roast for 20 minutes; then reduce oven temperature to 400 degrees Fahrenheit.
Continue to roast until potato wedges are tender and golden, about 30 minutes more.
