Ingredients

Roasted Mushroom Dip

  • 1 carton mushrooms

  • 1/2 large onion, sliced

  • 1/3 cup olive oil

  • 1 and 1/2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 and 1/2 cups mayo

  • 1 lemon, juiced

  • 5 to 6 garlic cloves

  • 1 tablespoon oregano or Italian seasoning

Directions

Preheat oven to 400 degrees Fahrenheit.

On a parchment-lined baking sheet, put the mushrooms, onions, olive oil, salt and pepper. Mix and roast in the oven for 10 to 15 minutes until nicely browned.

Once the mushrooms and onion mixture are roasted and are still slightly warm, add all into the food processor, then add the mayo, lemon, garlic cubes and oregano. Blend and enjoy!
