Roasted Mushroom Soup

Main ingredients

  • 3 boxes fresh mushrooms, sliced

  • 2 medium onions, diced

  • 4 cloves garlic

  • 4-5 Yukon white potatoes

  • 2 green squash

  • salt and pepper to taste

  • 2T chicken soup mix

Directions

Prepare the Soup

1.

Roast the mushrooms with some oil and salt for 20 minutes on 400 degrees Fahrenheit. Set aside.

2.

Meanwhile, in a 6-qt pot, sauté onions until golden. Add garlic and sauté for another minute. Add water, potatoes and squash. Add seasonings.

3.

Cook for 1 hour or until soft. Blend soup, then add the roasted mushrooms. Cook for 10 more minutes.
