Diets A great new twist on the melaveh malkah tradition of homemade pizza. Yield: 2 9-inch pizzas
1 sweet potato, diced
1 red pepper, sliced
1 yellow pepper, sliced
1 head garlic, peeled
2 tablespoons oil
1 teaspoon salt
20 ounces pizza dough (or store-bought)
2 cups shredded cheese
7 and 1/2 ounces Tuscanini Pizza Sauce
In a large bowl, toss vegetables with oil and salt. Spread on a baking sheet.
Roast at 400 degrees Fahrenheit for 25–30 minutes, until soft.
Cut the pizza dough in half. Roll out each half into a round pizza crust.
Spread sauce and cheese on dough. Top with roasted veggies.
Bake at 350 degrees Fahrenheit for 10 minutes, until cheese is bubbling.
