Roasted Veggies with Vegan Sausage

Ingredients

Roasted Veggies with Vegan Sausage

  • 2 red onions

  • 1/4 cup olive oil

  • salt, to taste

  • pepper, to taste

Directions

1.

Slice the sausage in quarter-inch circles. Cut the bell peppers and onions in larger slices. Add the veggies and sausage to a baking pan, add olive oil and spices, and mix well.

2.

Bake for 20 to 30 minutes at 450 degrees Fahrenheit. Toss veggies often to ensure even roasting time.

3.

Remove from oven. Serve with jasmine rice or other grain of choice.

No need to cover the veggies in the oven. You can if you’d like, to test out how covering the veggies changes the texture!
