Made with just a few ingredients, royal icing is perfect for decorating sugar cookies. As the icing dries, it hardens, resulting in beautiful cookies that you can personalize. Royal icing can be stored in the fridge for a few days if covered well, and finished decorated cookies can be stored in an airtight container for a couple of weeks.
2 egg whites (pasteurized)
1 pound Gefen Confectioners’ Sugar
Gefen Food Coloring (optional)
Beat egg whites and confectioners’ sugar until stiff.
Divide and add food coloring to obtain desired colors.
Place into pastry bag. Using various tips, form leaves, flowers and other decorations. Will harden when dry.
