This came out really good! It was a nice option for the Nine Days, and I want to try this idea with tuna as well.
2 cubes Gefen Basil
1 cube Gefen Parsley
extra-virgin olive oil
garlic powder
salt
eggplant, diced
oil
salt
1-2 salmon fillets
mustard
honey
salt
pizza dough
Bake pizza dough in the Betty Crocker (about seven to nine minutes). I made mine from scratch, but you could use store-bought pizza dough, too.
Make the pesto by combining all the ingredients. Set aside.
Toss the eggplant cubes in oil and salt. Bake it at 350 degrees Fahrenheit and then broil it.
Slather the salmon with mustard, honey, lemon juice, and salt. Broil salmon on high until cooked through. When cooled a bit, flake the salmon with a fork.
Spread some pesto on the dough. Layer on the mixed greens, fried eggplant, flaked salmon, and a drizzle of honey mustard dressing. Spicy mayo would also be really good.
