Sesame Hearts of Palm Noodles

Ingredients

Salad

  • 2 packs Heaven & Earth Hearts of Palm Spaghetti (18 ounces total), rinsed, drained, and patted dry according to package directions

  • 1 cucumber, sliced into long strips

  • 4 to 6 green onions sliced into matchsticks (cut into halves or quarters lengthwise)

  • 1 small bunch of cilantro, washed and roughly chopped

  • zest of 1 lime

  • 1/2 cup chopped toasted peanuts

  • 1 tablespoon toasted sesame seeds (optional)

  • 1 teaspoon red pepper flakes (optional)

Dressing

Directions

1.

In a small bowl, whisk together all dressing ingredients until smooth.

In a large bowl, toss the noodles, cucumber, green onion, cilantro, lime zest, and peanuts with the dressing until well coated.

3.

Sprinkle with sesame seeds and red pepper flakes, if using. Serve immediately.
