Diets If you’re looking for a gluten-free noodle option, these hearts of palm noodles are a great choice. They absorb the flavor of the dressing beautifully and make you forget you’re not eating traditional noodles. This salad is full of textures – crunchy, fresh, and creamy – so you won’t miss a thing.
2 packs Heaven & Earth Hearts of Palm Spaghetti (18 ounces total), rinsed, drained, and patted dry according to package directions
1 cucumber, sliced into long strips
4 to 6 green onions sliced into matchsticks (cut into halves or quarters lengthwise)
1 small bunch of cilantro, washed and roughly chopped
zest of 1 lime
1/2 cup chopped toasted peanuts
1 tablespoon toasted sesame seeds (optional)
1 teaspoon red pepper flakes (optional)
1/4 cup Mighty Sesame Tahini
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon maple syrup
1 tablespoon Gefen Sesame Oil
juice of 1 lime (about 2 tablespoons)
2 cloves Dorot Gardens Frozen Ginger
2 cloves Dorot Gardens Frozen Garlic
In a small bowl, whisk together all dressing ingredients until smooth.
In a large bowl, toss the noodles, cucumber, green onion, cilantro, lime zest, and peanuts with the dressing until well coated.
Sprinkle with sesame seeds and red pepper flakes, if using. Serve immediately.
