This is the easiest quickest dinner out there. I make it at least once a week in one form or another. The cool thing with this recipe is that you can personalize it as you please, add whatever vegetables you want or whatever sauce you want. Just chop the vegetables, put the chicken on top, sauce it and bake. Done.
4-6 chicken bottoms, full bottoms or just drumsticks
2-3 potatoes, cut into chunks or slices
2-3 onions, sliced
zucchini, squash, mushrooms, peppers or any other vegetable, cut into slices or chunks
1/4 – 1/2 cup sauce of choice (barbecue, teriyaki, or any other sticky sauce)
2 teaspoons kosher salt
1/4 teaspoon pepper
Spray the bottom of a pan with oil.
Place the vegetables down on the pan and sprinkle with salt and pepper.
Place the chicken on top of the vegetables.
Pour the sauce over everything.
Cover and bake for one hour 30 minutes.
Uncover and bake for another 15 minutes.
Preheat oven to 375 degrees Fahrenheit.
