Chanukah is all about the fun fried food, but if you’re anything like me, all the oil really starts to affect me – but I still want exciting fun foods! This is when the air fryer comes in so perfectly. These smashburger eggrolls are crazy easy and quick and are so indulgent. You can prep the beef ahead of time and legit make this in minutes. Enjoy!!
lean ground beef
oil
1 pack of Gefen Egg Roll Wrappers, defrosted
6 cubes Gefen Frozen Sautéed Onions or 1 onion to sauté
salt
pepper
garlic powder
onion powder
BBQ sauce
vegan shredded cheese (I used Daiya)
Heat a pan with some oil. Add the ground beef and break it up, then add the seasoning and some BBQ sauce (really to your liking – it will come out good either way). Mix continuously till the meat is browned (should take no more than a few minutes).
Lay out egg roll wrappers on a diagonal. Place two tablespoons ground beef a little below the center. Sprinkle cheese over the ground beef.
Fold and wrap: roll up the bottom corner of the wrapper over the filling; tuck it tightly over the filling. Fold in the sides, then roll up the egg roll from the bottom to the top.
Place in air fryer basket. Spray with oil and air fry at 400 degrees Fahrenheit for five minutes, then flip and fry another five minutes (check on these. The timing might be different depending on your air fryer.)
