Who doesn’t love a yummy gooey s’more? I thought it would be the perfect flavor to incorporate into a cookie! These are always a hit.
scant 1 cup oil
1/2 c. sugar
1 c. brown sugar
2 eggs
1 tsp vanilla
2 and 1/3 c. flour
1 and 1/8 c. graham cracker crumbs (I’ve also subbed tea biscuit crumbs in a pinch)
2 tsp. cornstarch
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 and 1/2 c mini marshmallows
1 c chocolate chips
Mix oil and sugars together in the mixer, for 2 minutes.
Add eggs, one at a time, and then vanilla. Mix for one minute.
Turn off mixer, pour in flour, crumbs, cornstarch, baking powder, baking soda, and salt.
Mix on low until incorporated.
Stir in mini marshmallows and chocolate chips.
Preheat oven to 375F.
Portion out cookies on parchment lined cookie sheets.
Bake for 10 minutes. Enjoy!

do these freeze well? I want to make them for my mishloach manis in advance…

I would use an ice cream scooper to scoop out cookie dough balls.
