Kids love Spanish rice so much; you can double the recipe and invite some over to share!
In medium-sized pot, sauté onion and pepper in oil, until soft and slightly browned.
Add rice and stir for five minutes. Pour in boiling water and tomato sauce. Stir. Cover and lower ﬂame.
Cook for 20 minutes to half an hour, checking every few minutes to see if water is absorbed into rice. Add salt and toss lightly.
Substitute brown rice for white rice. After lowering the ﬂame, cook 30 to 40 minutes.
