Diets Kids love Spanish rice so much; you can double the recipe and invite some over to share!
1 medium onion
1/2 a red pepper, diced
1/2 a green pepper, diced
1 tablespoon oil
1 cup raw rice
2 and 1/4 cups boiling water
8 ounces Gefen Tomato Sauce
dash of salt
In medium-sized pot, sauté onion and pepper in oil, until soft and slightly browned.
Add rice and stir for five minutes. Pour in boiling water and tomato sauce. Stir. Cover and lower flame.
Cook for 20 minutes to half an hour, checking every few minutes to see if water is absorbed into rice. Add salt and toss lightly.

Great side with limited ingredients. I would though flavour it a little more next time.
