What I love about this great side dish is its ease of preparation. By combining freshly cooked rice with sauce from my chicken, I instantly end up with rice that has superb flavor and a whole new look!
3 and 1/4 cups water
1 teaspoon salt, or to taste
1 and 1/2 cups raw white or brown rice
leftover sauce from my Zesty Red Chicken recipe
Place rice and water in a medium-sized pot; bring to a boil. Add salt and lower heat. Cover pot and cook 20 minutes for white rice and 30 minutes for brown rice, or until water is absorbed.
Stir in remaining sauce from Red Zesty Chicken and serve alongside chicken.
