Spelt Potato Knishes

Me and one of my kids can’t have wheat but can eat spelt and everyone loves potato knishes and my kid always felt left out when everyone was eating so I developed this recipe so they could also eat potato knishes.

Ingredients

Dough

  • 4 cups spelt flour

  • 1 cup oil

  • 1 cup room temperature water

  • 1 teaspoon salt

Filling

  • 5 potatoes

  • 2 eggs

  • 1 onion, diced

  • salt

  • pepper

  • 1 egg, to brush the knishes

  • sesame seeds, for decorating

Directions

Prepare the Dough

1.

Preheat oven to 350 degrees Fahrenheit.

Mix the spelt flour, oil , water and salt till it’s combined.

3.

Then roll it into a rectangle and cut the dough into squares.

Prepare the Filling

1.

Cook and mash the potatoes.

2.

Fry the onion.

3.

Combine the potatoes with the onions and add the eggs and salt and pepper to taste.

Assemble

1.

Put a spoonful of mixture on the dough squares and fold into a triangle.

2.

Brush with egg and sprinkle sesame seeds.

3.

Bake in a 350 degree Fahrenheit oven till it browns.
