Diets I always appreciate a vegetarian option at an all-meat Chanukah party. These mushrooms are super easy to prepare and are great for a crowd. They also make an excellent weekday side dish!
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
2 tablespoons brown sugar
1/2 teaspoon coriander
1/2 teaspoon chili powder
1/2 teaspoon black pepper
1 tablespoon salt
1 teaspoon dried parsley or 2 cubes Dorot Gardens Frozen Parsley
16 ounces (450 grams) white button or cremini mushrooms
2 tablespoons Gefen Olive Oil
Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).
Combine crushed garlic, brown sugar, and spices.
Trim mushroom stems and rinse well in cold water, then drain and pat dry.
Toss mushrooms with olive oil, then toss in spice mix.
Lay out onto a Gefen Parchment-lined baking sheet and bake for 25 minutes.
Serve on cocktail toothpicks or stack two on a small skewer.
