Diets This easy chicken dish has a great flavor combo, with just a bit of zip to top it off. Not too spicy for the kids, it pairs perfectly with creamed potatoes.
1 and 1/2 pounds chicken fingers or cutlets, cut into strips
2 tablespoons oil
1 teaspoon chili powder
1/2 – 1 teaspoon hot paprika, or to taste
1/4 teaspoon seasoning salt
generous dash cumin
2 large onions, sliced into rings
oil, for sautéing
salt
Combine marinade ingredients and mix with chicken fingers until fully coated. Allow to marinate 30 minutes.
Meanwhile, in a large frying pan over medium heat, sauté onion rings in oil until golden brown and soft.
Add chicken to pan and sauté until chicken is cooked through and insides are no longer pink. Sprinkle generously with paprika and stir to combine. Season to taste with salt. Remove from heat and serve.
