Diets The quintessential summer salad!
24 ounces baby spinach leaves, checked
10 ounces fresh strawberries, hulled, washed and peeled (or other fruit of your choice)
1 small red onion, thinly sliced
4 ounces Ta’amti Feta Cheese, crumbled
1/2 cup sliced almonds, toasted
1/2 cup plain Greek yogurt
1 tablespoon Gefen Mayonnaise
3 tablespoons milk or water
1 tablespoon Tuscanini Apple Cider Vinegar
1 tablespoon Gefen Maple Syrup
2 teaspoons poppy seeds
salt, to taste
fresh ground Gefen Black Pepper, to taste
Place spinach leaves in a large salad bowl. Slice strawberries and add to spinach. Top with onion slices, feta cheese and toasted almonds.
Drizzle lightly with dressing just before serving.
Add all of the ingredients to a bowl or jar. Whisk together until smooth then season with additional salt to taste.
Store the dressing in a jar with a lid or other airtight container in the refrigerator for five to seven days. Stir or shake as needed before using.
