Diets I am always looking for soups that are refreshing and easy to serve in the summertime. This recipe not only takes advantage of the super-sweet strawberries and cantaloupe available now, but it is done in one bowl and takes only five minutes to prepare!
1 pound strawberries, frozen or fresh (if frozen, defrost)
1 cup cantaloupe pieces
2 tablespoons fresh lemon juice or Tuscanini Lemon Juice
2 tablespoons Manischewitz Honey
1/2 cup orange juice
mint, for garnish (optional)
Place all ingredients in a bowl and blend together with a hand blender (you can also process in food processor) until it reaches desired consistency. Chill for at least two hours.
To serve, pour into bowls and garnish with fresh mint, if desired.

Fresh Strawberries? Looks like a great recipe…but Is that a problem of possible bug infestation? Also, I assume it’s possible in Lakewood to buy fresh mint with reliable cert. Please clarify.
