I am always looking for soups that are refreshing and easy to serve in the summertime. This recipe not only takes advantage of the super-sweet strawberries and cantaloupe available now, but it is done in one bowl and takes only five minutes to prepare!
Directions
1. Place all ingredients in a bowl and blend together with a hand blender (you can also process in food processor) until it reaches desired consistency. Chill for at least two hours.
2. To serve, pour into bowls and garnish with fresh mint, if desired.
