Diets These cookies come together in about a minute in the food processor. They’re a great bite-size treat to satiate your sweet tooth using totally clean, all-natural ingredients.
1 cup natural, sugar free peanut butter
4 to 5 Medjool dates, pitted
2 eggs
Preheat oven to 350 degrees Fahrenheit.
Soak dates in boiling water to soften, for 15 minutes.
Blend all ingredients in food processor with S blade.
Drop by spoonful onto lined cookie sheet. Bake 15 minutes. Freeze and serve frozen.

Easy healthy snack with no exotic or expensive ingredients to go hunting for. I liked it better more well done, baked on 375 for 15 minutes. Came out fluffier. And yes, definitely best served frozen.
Was very good. Next time I make it I want to add chocolate chips or craisins
