We love this delicious mashup! You can enjoy sushi “donuts” fresh, or in the spirit of Chanukah, battered and fried! Submitted by Yides Banda (Designer Bakehouse and Cookery, Israel) *Second Place Winner of the MyKosher.com Chanukah Challenge!*
tempura batter and oil (optional)
saran wrap
silicone doughnut mold
spicy mayo or sweet sauce
nori
cooked sushi rice
sushi toppings and fillings
Prepare your silicone mold and layer it with a sheet of saran wrap. Poke little holes in the center of every doughnut so the saran wrap cups right in.
Line the bottom with a thin sliver of your favorite sushi toppings (example: avocado, cucumbers, mango, fish).
Fill the doughnut with sushi rice only halfway. Pinch the center of the rice to make an indentation so that you have room for fillings.
Fill with desired filling (example: cooked salmon, shredded veggies, kani, etc.)
Seal the rest of the doughnut with rice making sure that it’s tightly stuffed.
Cut a square of nori three by three and place it on a doughnut.
Let rest for five minutes and then carefully turn over your doughnuts. (For a tempura doughnut, dip in batter and deep fry).
Drizzle with spicy mayo and enjoy!
