Super easy and perfect for anyone who wants to try making Challah. Yield around 5 medium – sized Challahs or 15 rolls.
1 and 1/2 tablespoons yeast (2 packets)
8 cups all-purpose flour
2 cups white whole wheat flour
3 eggs
2 teaspoons salt
1/4 cup oil
1 egg, lightly beaten
2 and 1/4 cup warm water
toppings as desired (such as sesame seeds, poppy seeds, everything bagel seasoning, etc.)
3 tablespoons sugar
1/4 cup honey
Pour oil all around the bottom and sides of the bowl. Add water, sugar, honey and yeast. Mix and let it rest for five minutes.
Add around four and 1/2 cups flour, and the eggs. Mix on medium speed for around five minutes, and let it rest for 10 minutes.
Add remaining flour, and salt. Kneed until forms a dough. Dough should not be sticky. Cover the bowl with a towel and let the dough rise for one hour.
Preheat the oven to 375 degrees Fahrenheit. Grease however many Challah pans or roll pans you need, depending on how much you want to make. Punch down dough. (See note below). Braid Challah, and cover and let it rise for 15 minutes.
Brush with egg wash and top with your favorite topping. Bake in preheated oven for 40 minutes for regular Challahs, and 20 minute for rolls (depending on the sizes of your challah and rolls, check on them as they smell ready). When the Challahs are done, you should be able to tap on the bottom and hear a hollow sound.
