On a cold winter night, comfort food is king. And nothing is more comforting than a hearty meat sauce over pasta. My version is faintly sweet, loaded with vegetables, and is so addictive that you can literally eat it with a spoon out of the pot. Not that I’ve ever done that…..
3 tbsp. oil
1 lb. ground beef
1 onion, chopped
1 red pepper, chopped
8 oz. mushrooms, chopped
1 jar of your favorite tomato sauce (I like Barilla Marinara or Trader Joe’s Marinara)
2/3 cup red wine
2 tsp. sugar
1 tsp. salt
1 tsp. pepper
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. Italian herbs
1 tsp. crushed red pepper
Pasta for serving
Heat the oil in a pot and brown the ground beef until mostly cooked. Add the onion, red pepper, and mushrooms and cook for about 10 minutes, or until the vegetables are soft and a lot of the liquid has evaporated. Add the tomato sauce. Then, pour the wine into the tomato sauce jar, close the jar, shake it up, and add the wine to the pot. (This will make sure you get every last drop of sauce!) Add the sugar, salt, pepper, onion powder, garlic powder, Italian herbs, and crushed red pepper. Mix well and bring to a boil. Cover, reduce to a simmer, and cook for 90 minutes to 2 hours (or however much time you have – the longer, the better). Serve over pasta with crusty garlic bread to mop up it all up!
