A fun and flavorful way to enjoy apples. These are great in a cheese sandwich, over a salad, or as a snack with cheese and nuts.
1 cup water
1 cup sugar
1 teaspoon Gefen Cinnamon
2 tablespoons Haddar Kosher Salt
2 shallots, sliced thin
1 jalapeno, seeded and sliced thin
3 sweet red apples, cored and cut thin
2 sprigs rosemary
In a small pot, add vinegar, water, sugar, cinnamon, and salt and heat on a medium flame until the sugar and salt dissolves, stirring every so often.
Let it cool in the fridge until lukewarm.
In a large glass jar, layer shallots, jalapeno, and apples. Repeat until the jar is full.
Add rosemary to the sides of the jar.
Add the lukewarm vinegar mixture to cover. Add more water if needed.
Refrigerate for one day before eating.
