Diets Go for something that’s a little different! This tomato appetizer is delicious with challah or mixed into a salad or rice.
1 teaspoon oil or cooking spray
2 boxes of cherry tomatoes
1 head of garlic, peeled
Gefen Oregano to taste
Add tomatoes and garlic to a greased (with light cooking spray) oven-safe dish. Using an oven-to-table dish when preparing this confit adds a nice touch! The dish should be very crowded.
Spray the tomatoes very well, or measure out one teaspoon of oil and drizzle over the tomatoes. Toss with salt and oregano.
Bake at 450 degrees Fahrenheit for about 20 minutes until the tomatoes are charred and bursting.
Remove from the oven and drizzle with balsamic vinegar. Serve warm.
