3/4 cup pecans
3/4 cup homemade mayonnaise
2 tablespoons sugar
3/4 cup Oberlander’s Knaidels and Krumbs
1 and 1/2 pounds chicken cutlets, cut into thick nuggets (thinly-sliced chicken will not work)
2 tablespoons oil
1 onion, cut into thin slices
1/2 cup homemade mayonnaise
1/4 teaspoon salt
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
In the bowl of a food processor, pulse pecans one to two times. Mixture should be crumb-like, with some larger pieces of nuts.
In a small bowl, whisk together mayonnaise and sugar. In a second small bowl, combine pecans and crumbs.
Add chicken to mayonnaise mixture and mix until nuggets are coated. Working with a few nuggets at a time, dredge them in the pecan-crumb mixture. Place on prepared baking sheet. Bake for 10–12 minutes on each side.
Heat oil in a sauté pan over low heat. Add onion and sauté until golden and caramelized, about 20 minutes.
In the jar of a food processor, combine onion, mayonnaise, and salt. Blend to combine. Serve alongside nuggets.
