Diets Chanukah is my favorite time of year because I love frying. If you have been following me, you probably know that! This latke recipe is so delicious and flavorful. Enjoy!
1 large sweet potato (750 grams/26 ounces)
200 grams (7 ounces) crumbled Taamti Feta
1/2 cup flour
1 medium egg
6 green onions, finely chopped
1 teaspoon garlic powder
1/4 +1/8 teaspoon salt
1/4 teaspoon black pepper
about 1 cup of oil for frying (I used avocado)

Peel and shred your sweet potato. Place the shredded sweet potato in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
In a large bowl, combine the sweet potatoes, feta cheese, egg, flour, green onions, garlic powder, salt, and pepper. Mix well until everything is combined.
Heat a large frying pan over medium-high heat and add enough oil to coat the bottom (a cup should be good).
Once the oil is hot enough, add in the carrot. Spoon portions of mixture into the frying pan and flatten them out, making sure not to overcrowd the pan.
Cook each side for two to three minutes or until crispy and cooked through.
Place the latkes on a cooling rack.
When ready, serve with your favorite toppings. I like sour cream or cranberry sauce!
